Friday I went to Bangkok, Thailand only to come back to Ho Chi Minh City the next morning to make it to my 9:00AM class. It’s Tuesday and I’m already waiting for the weekend to come and do absolutely nothing.
This week, Si’s friends are staying with us for a few days to experience Vietnam. After we dropped off their bags at our place, we took them to Pho Hung for a late dinner. For breakfast, Si picked up some banh mi with all the fixings. The banh mi cart is just a few steps away from my work and it is only open for a few hours in the morning until everything is sold out. I went to get some coffee today around 9:30 and the cart was already gone for the day.
A 51 cent (10000 VND) breakfast Banh Mi consists of grilled pork, fried egg, sautéed onions, cucumbers, pickled carrots & radish, and cilantro. A spread of pate and mayo with a squirt of sweet chili sauce and soy sauce season everything inside. Pork is grilled next to the cart and eggs fried to order. The fresh ingredients are all assembled in a light crusty Vietnamese baguette right in front of your eyes.
I chase this sandwich down with a 36 cent (7000 VND) Vietnamese iced coffee to start my day at work. Breakfast of champions.
