I’m always inspired by breakfast and brunch dishes. If I could, I would host a brunch every weekend just so I can try out different recipes.
This bacon kimchi potato hash is the perfect side dish to accompany sweet and savory dishes. It can also be served as the main dish topped with a fried egg. To make it even more indulgent, add a sprinkling of grated cheese of your choice on top and quickly broil for some melty goodness.
Kimchi Bacon Hash
Serves 2 (Recipe can be easily doubled or tripled)
3 strips of bacon diced
2 medium potatoes diced in 1/2 inch cubes
1/2 cup of roughly chopped kimchi (juices drained)
1 tbs of butter
In a frying pan on medium-high heat, render the bacon fat and cook the bacon until crispy. Set the cooked bacon aside in a bowl. Add the diced potatoes into the pan and cook through until tender. Add the chopped kimchi with 1 tbs of butter into the pan. Sauté the potatoes and kimchi until the cabbage leaves brown at the edges. Add the bacon back into the pan and mix everything together. Salt and pepper to taste.
