Just a quick post! A weekend roast of pork shoulder for twenty people led to a pretty good amount of leftovers. I always have the tendencey to make too much food in fear that there might not be enough food to go around.

Dolsot Bibimbap

Si and I ate two days worth of leftovers by making dolsot bibimbap (mixed rice). With the leftovers on hand, this was an epic bibimbap that I would roast another pork shoulder just for this meal.

I will not be posting a full detailed recipe below, but I will mention all the components going into this dish to show the fun versatility of bibimbap. It is an easy meal to make if you had a Korean BBQ night or perhaps you tried out Momofuku’s Bo Ssam Recipe at home.

COMPONENTS
• Pulled pork
• Caramelized onions
• Bacon
• Quick pickled cucumbers
• Pickled soy vinegar onions
• Pan fried kimchi
• Lettuce and perilla leaves
• Sunnyside up egg
• Gochujang (Korean chili paste)
• Ssamjang (Korean miso paste)
• Scallion ginger sauce
• Roasted Seaweed
• Grated mild cheddar cheese
• Sesame oil and sesame seeds
• Rice

Yes, cheddar cheese. It adds a tasty richness and oomph to the bibimbap!
